Cheesy Potato Soup

The other night my boyfriend asked if I could make this potato soup I had made a while back.
Only problem was, I didn't write that recipe down.
So I had to start over and hope for the best.

I did remember this much... I had used white and red potatoes.
I peeled and diced 5 small yukon potatoes and added those to a large pot.
Then I diced 5 small red potatoes.

Then I added my seasonings {I kinda guesstimated so let's hope this is right!}...

You can play around with this to your tastes... mine had a little kick to it.

1 small finely diced onion {my boyfriend doesn't like onion so I have to make it as inconspicuous as possible!}
1 tablespoon seasoned salt
1 teaspoon garlic powder
1 tablespoon cajun seasonin
1 teaspoon salt
1 teaspoon pepper

Then I added 4 cups of chicken broth.

I popped a lid on the pot and let it simmer/boil until the potatoes were cooked.
Then I used a potato masher and mashed it up a little bit.

This will help thicken your soup so the more you mash, the thicker it will be.
I also added 1 cup 1/2 and 1/2 to add some creaminess.

Lastly I added 1 cup of shredded cheddar cheese, stirred until smooth and then removed from heat.

Serve and enjoy!

I topped mine with a little extra cheese and some chives.

It was really good!
The boyfriend ate an entire bowl and asked me if we could keep it warm in case he wanted seconds.
There were enough leftovers that I had a bowl for lunch the next day.
And the boyfriend took some twice for his lunches.

It was such a big hit with both of us.
Thank goodness I wrote it down this time!
