I'm Baaaackk!

And I'm marrrried :)

The wedding was perfect! Once we get all of the pictures back from the photographer, I'll share them! We had a great honeymoon too. Got to go ziplining in Jamaica and scuba diving in Grand Cayman. That was AMAZING! We had a blast. Towards the end of the cruise, the weather got pretty rough and I got pretty seasick. Poor Skyler had to take care of me :(

It's been a whirlwind since we got home. Christmas was pretty crazy, running from house to house. And then I've developed a respiratory infection. I tried to wait it out but Skyler ended up having to take me to the doctors office. He's really getting to experience the whole "in sickness and in health" aspect of our vows! I got a shot and a bunch of meds. I'm starting to feel a little better but still have a nasty cough!

We've found that being married to each other isn't so different. I thought I would have trouble adjusting living with someone else since I've lived alone for 16 months. But we are making it work :) We are, however, finding out things we didn't really know about each other. Finding little habits we like. And finding little habits we don't like (Skyler, put the toilet seat down!).

Yesterday, Skyler and I did our first DIY project. We installed our new cooktop. I've had it for a while, it just needed to be installed. Here's the old cooktop when I first moved in. Harvest gold, coil electric, gross:

And here's the new one (the walls, countertops, and cabinets have been painted for a while now):

MUCH better! It took us about an hour to change out everything. And we only wanted to throw it across the kitchen once or twice. It took a lot of teamwork, trading out when one of us got tired or mad. It looks so nice and I LOVE it! Now hopefully I can get the oven switched out soon too. But that's a much larger project for another time :)

I've missed you all so much! And I've missed blogging. I'm really looking forward to getting back into the groove of things so be looking for new things on here!

And in case you haven't noticed, I've got my own domain name now! You are now at www.notsohomemade.com! SO excited :) I've been meaning to do this for a while now!

I haven't fallen off the face of the earth!

I promise!

Just way too busy getting ready for my wedding.

Which is 4 weeks and 6 days away. Technically 4 weeks, 5 days, and some hours. Or 33 days. Not that I'm counting or anything.

It has been a WHIRLWIND! I've had 2 wedding showers, one left to go. I've got stuff EVERYWHERE! My house is a wreck. My floors were supposed to be installed, but the guy who was going to be doing it can't anymore. Work is crazy. I'm ready to have my 3 weeks off in December! A cruise is just what I need!

So bear with me please :) I've been taking pictures of stuff I want to share (recipes, mostly). And hopefully once the wedding is over and things settle down a little bit I can return to blogging. Because I really enjoy it! And I miss being able to check out what everyone else has been up to!

Miss you all!

Rainbow Rotini & Onion Pasta Bake

I had some leftover cooked rainbow rotini pasta that I needed to find something to do with. I googled a little bit and found this recipe over at Allrecipes.com. I used this as the base for my recipe and tweaked it to make it my own.

First I already had my rainbow rotini pasta cooked (about 3 cups).

I also sauteed a sliced onion in 1 tablespoon of olive oil.

I mixed 1 beaten egg and 1 cup shredded mozzarella cheese with the pasta.

I put that in a casserole dish and baked at 350 degrees for about 20 minutes.

For this next part you can use canned pasta sauce or make your own.
I didn't have any spaghetti sauce so I improvised. I mixed a small can of tomato sauce, a can of tomato paste, a bit of water (to thin it out), some garlic powder, and oregano.

I topped the baked pasta with the sauce, then with another cup of cheese.

Bake this at 350 degrees for another 15 min or so.

Enjoy!

It was really good! I couldn't help going back for seconds :)

New Design!

So the design has actually been up for about a month, just needed to finish a few small details. Finding the time for this, however, has proved to be challenging! But it's all finished now!

I've changed up my header. I now have 2 rows of sections.

The top row is just general pages. I moved all my buttons to one page to reduce clutter on my blog.

The second row is full of different categories you can find on my blog. I've also added sections for stories about my everyday life and for my NICU nursing experiences.

So..... What do you think?

Kitchen Nook Makeover

So this post is LOOOONNNGG overdue. Seeing as I finished this MONTHS ago! But anyways...

When I moved into the house, there was this weird nook in the kitchen, next to the pantry. The previous owners had some cheap wire shelves that I guess they stored extra groceries on. It was a really dark area without much functionality.

Once it got a fresh coat of paint, it looked much better!

But it needed more. It wasn't long before I had an idea in mind to turn this area into a kitchen desk. With shelves for my cookbooks. I got measurements and drew up an idea, showing it to my dad. Being the best daddy ever, he helped me go shopping at Lowes and get the stuff I needed. Then spent a Sunday afternoon helping me bring my idea to life! First things first, we set up shop in my garage. On the back of my dad's pick up. I live in Louisiana. It's how we roll. You should've seen when we cut the desk part. I stood in the back of the pickup on the wood bracing it while my dad cut. I would like to note, however, I did a lot of the cutting!

We cut some wood to make the wall support. I'll admit, I had to have my dad screw these into the wall. I lacked the muscle to do this. We used wood screws since I have paneling. I painted them before we put them up too.

Then cut the shelves. Used some this shelves for the bookshelves, and a thinner one for the desk. Also used a trim on the front of the desk that I hotglued to it.

Painted the shelves white.

Then decorated! All my bookshelves are at the top, I was able to use some decorative bowls I had to tie in my accent color, which is red. Also have the boxes turned magazine holders I made a long time ago.

Got the desk all nice and organized too....

This is a tray I found at a garage sale. Just gave it a fresh coat of paint. Perfect as a catch all.

I gave a new facelift to an old makeover. Used a t-shirt scrap to cover this message center thing.

So... what do you think? Oh and I made the desk tall enough that I can use one of my dining room bar stool height chairs to sit at it!

Avocado Chicken Salad

So a LOOONG time ago I saw this recipe on Pinterest. It's from Becoming Betty. Avocado Chicken Salad.  MMMMM.

It's really easy to make. You can find the recipe HERE. It's pretty basic. The things I did different... no cilantro, not as much green onions, and the type of may I used was the olive oil mayo (a very tiny amount!). I probably added more avocados then she does. I made a big batch of this stuff.

It is really good! And better for you than traditional chicken salad with all that mayo. It tastes great on a sandwich.

And over a bed of lettuce as a salad.

Here's an unedited photo so you can see the exact color it turned out.

I think this would be pretty good with egg salad too. Maybe tuna. I haven't tried those yet.

Do you have any healthier alternative recipes?

Cucumber & Tomato Salad

One of my favorite dishes growing up was this cucumber & tomato salad my dad would make. It's really easy to make and tastes delicious! It's even better if you can get your hands on some fresh from the garden veggies!

First, chop up some tomatoes and slice up some cucumber. The skin on this cucumber was pretty tough and thinking back, I would probably peel the cucumbers first. You could also add other veggies if you wanted. Onions are great!

Season with salt and pepper.

Top with Italian dressing, let marinate, enjoy! The longer it marinates, the more the flavors infuse, and the better it tastes :)

Where Does Time Go?

Where does time go?
Seriously.
Time has been flying lately.
I know I've been a little AWOL as of late.
But here's what's been going on with me...

Planning a wedding.
Enough said.

We have chosen a date.... December 15, 2012.

Booked a honeymoon.... spend the first night in New Orleans then get on a 7 day cruise to Jamaica, Grand Cayman, and Cozumel.

Booked a ceremony venue.... our church.

Set a time.... 2 pm.

Booked a reception location.... a local community center with floor to ceiling windows!

Chosen a theme.... natural colors, burlap, lace, creams, browns, and a pop of Tiffany blue, with mason jars, old bottles, old windows, birch branches.

Picked out my flowers.... hydrangeas, calla lilies, and maybe a few daisies.

Booked a photographer & videographer.... they're really good!

Picked out my bridesmaids.... Tayler (Skyler's sister) will be my maid of honor. Nichole, and two childhood friends (Ashley and Erin) will be bridesmaids.

Decided on groomsmen.... Skyler's childhood friend, Jarris, will be his best man. And his other friends Adam, Chris, and Cory will be groomsmen.

Picked out bridesmaid dresses....  THIS dress in Champagne color.

And my most exciting news is I got my dress! Like, it's in my house. I have to resist the urge to put it on all the time. And I got THIS super cute flower clip om white. I've decided to keep growing my hair out (it's probably mid-back right now). That way I can do what I call the "disney channel curls". Huge curls (not tight curls).

It's all been so overwhelming. I keep saying if I can make it to December I'll be doing good!

Anyways, everyone... catch me up! What's been new with you all??

DIY Simple Flower Wreath

So the yarn wreath I made a while back finally bit the dust. And it was time for a new one! And since I vowed NEVER to make another stinkin' yarn wreath, I had to try something else. I have seen some similar on Pinterest so that's kinda where my inspiration came from. And here's what I came up with!

I made a quick trip to Michael's and got the numbers for my house, vibrant fake flowers (which were on sale!), and a grapevine wreath (which I used a 50% coupon!).

I painted up the numbers in bright aqua blue for summer. And then pulled the flowers off the stems and arranged them, as well as the painted numbers on the wreath.

Simply hot glued and I was done! It took hardly no time at all! And I LOVE how it turned out! (please excuse the HORRIBLE shadows in the picture!)

-------------------------------------------------------------------------------

I found this super fun bookend over at The Pink Window! Isn't it funny! I need some of these!
