Onion Potatoes & 2/23 What's Cooking Wednesday

I LOVE these potatoes! My mom has been making them since I was little and they are SUPER easy to make!

First, peel and cube some potatoes (4-5 medium size).

Add some butter (about 1/4 a cup).

Season with salt and pepper.

Then add chopped onion... the best part. I used about 1/2 an onion. You could also use dehydrated onion if you wanted.

Cover with plastic wrap and cook in the microwave for about 10-15 minutes or so until potatoes are soft. I had to toss mine in the microwave for a few more minutes to get as soft as I wanted.

Stir and enjoy! We also had steaks and green beans with them.
