Chicken & Dumplings & 1/12 What's Cooking Wednesday

Mmmm... I LOVE chicken and dumplings :)




My mom has been making them since I was little and this is the way I've always remembered her making them. It's a not-so-homemade way of it too! Which means, easier and less time. Which we all love, right?

So anyways, first, get some water boiling in a pot and cook you some chicken breasts.



Once it finishes cooking through, remove it to a side plate and let it cool some. Then cut it into small pieces or shred it. You can just use the water from the chicken or remove some (or all) and add chicken broth. I did about half and half for flavor.


Add the chicken to the liquid and bring to a boil.


Now get you some biscuits. This is a great time to use up those lingering cans in your fridge that are getting close to that use by date. Buttermilk, homestyle, whatever floats your boat. You'll want to add as many cans as you want dumplings (each biscuit will make 4-8 dumplings, depending on what size you want).


Now, here's the fun part. Tear the biscuits into small pieces and toss them into the pot. You'll see them start expanding....


And expanding.


Be sure to stir often to rotate the biscuits. The liquid will also start to thicken. Let the biscuits cook through. Taste test to see. Also add salt and pepper to taste.



And here you have it... yummy, warm, chicken and dumplings!

Over at Rae Gun Ramblings, Marissa has posted a TO DIE FOR recipe for Turtle Cheesecake. I mean, just look at this picture! Yea, is your mouth watering yet? Because mine certainly is! I wish I had all these ingredients so I could make this. Like NOW :)



Danielle, over at Mostly Foods and Crafts, she shared with us a recipe for a DELICIOUS Spinach Artichoke Pasta Bake. This is how she got her kids to eat spinach. I LOVE, LOVE, LOVE spinach and artichoke dip (if it's made good) and I really think I'm going to have to make this recipe! I think my dad and mom would really like it too :)

Thanks for visiting my blog! You can definitely find the dried beef at most stores. I got mine at super walmart and have seen it at our other grocery stores - harris teeter, bilo. I believe it would be on the aisle with other canned meats such as tuna and spam.
