Candy Corn Cupcakes with Mini Acorn Cupcakes

I've been MIA lately! I'm sorry! I totally missed Spotlight Sunday, but I didn't have anyone to highlight anyways. I've got something in the works for this Sunday that I hope works out! I'm really excited about this one!

Anyways, I had an idea of some cupcakes I wanted to make. Then, yesterday, my dad asks if I can make "a cake or something". Great opportunity to try out my idea :)

So I made some "Candy Corn Cupcakes" :)

I had these triangle silicone cupcake molds my mom had gotten a few years ago. I've never used them before but this was the perfect opportunity!

I started with some white cake mix, mixed it up according to the box directions.

First I filled each with some plain white batter.

Then I dyed a little batter orange and layered that next.

Last was the yellow layer...

I tossed them in the oven and let them cook.

The silicone molds worked really well! Then popped right out!

Then I iced them with some cream cheese icing. Just a little dollop on top :)

I only had 6 triangle shaped cupcake molds and I was too impatient to wait for them to finish cooking. So I colored the rest of the batter a light brown and filled my mini muffin tins with the rest of the batter. Cooked those at the same time as the Candy Corn cupcakes.

Then I dyed the rest of the cream cheese icing a brown color (I gave up trying to make it really brown) and dolloped the top. I tried to make them look like little acorns for fall :)

Well hopefully I can get back into the groove of things. This year is just flying by!

Oh and I have a job interview tomorrow with a local hospital for the Pediatrics department! Fingers crossed!
