Who doesn't love a yummy cupcake? Well I've seen several different ways people make rainbow cupcakes but this is the "not-so-homemade" way to do this :)
I started with a box of white cake mix and the BEST frosting EVER... RAINBOW CHIP! (If you've never had it before, you're really missing out!)
I separated the prepared cake mix into 6 bowls and mixed in some food coloring. I ran out of red dye so we got pink instead...
Then I layered the colors in the muffin cups starting with purple, then blue, green, yellow, orange, and red (aka pink).
Baked them according to the box directions and VOILA! Rainbow cupcakes :) The box made about 18 for me but I guess it'll vary depending on how full you fill the pan.
Throw on some YUMMY frosting and take a bite! I used most of the can of frosting but I made sure I left some for my brother. He eats the stuff right out of the can. I always have to hide the frosting if I plan on using it :)
I don't have any kids but I think this would be a fun activity to let them mix the batter and layer it. It's fun to watch the cupcakes rise in the oven too! And let's not forget the fun task of icing the cupcakes!
